Qualifications

• High school diploma or equivalent; culinary degree or certified program preferred.
• Previous supervisory experience required.
• At least 5 years as Sous Chef in a 4- or 5-star establishment with large conferences and banquets.

Responsibilities

• Create an atmosphere that encourages guests to choose Hard Rock Cincinnati and mentor staff to deliver superior service.
• Hire, train, motivate, evaluate and supervise staff to meet objectives.
• Oversee all Hard Rock Cincinnati food outlets and kitchen personnel.
• Align with vision, standards, budget to supervise department effectively.
• Establish training procedures to ensure superior guest service.
• Plan menus considering conditions, popularity of dishes, holidays.
• Check food prep methods, portion sizes, and garnishing by tasting.
• Procure supplies and kitchen equipment from approved suppliers; approve quality of foods received.
• Ensure proper storage and health compliance; coordinate with Purchasing for quality products.
• Consult with catering sales manager and clients to tailor special menus.
• Monitor food cost variances and adjust pricing for net profit.
• Meet budget guidelines for food cost, labor cost and miscellaneous costs.
• Attend meetings and complete follow-up as assigned.
• Perform work regularly and predictably.
• Other duties as assigned.
