Job summary

Marble Canyon Lodge is seeking a dedicated kitchen porter/dishwasher to support cooks and servers by keeping dishes clean and stocked, and by maintaining overall hygiene in the dining and prep areas. You will sort, rinse, and sanitize dishes and ensure supplies are ready for service, while helping keep the kitchen organized and safe.

This role requires following ServSafe guidelines, operating dishwashing equipment, responding quickly during peak times, and assisting with event breakdowns.

Qualifications

• ServSafe Training or equivalent food handler certification.
• Ability to communicate effectively with guests and staff.
• Ability to stand during entire shift.
• Ability to operate dishwashing equipment and light cleaning tools.
• Must be able to work outdoors and adapt to weather conditions.

Responsibilities

• Sort dishes in the dish pit and categorize as needed.
• Rinse, scrub, and load dishes into the dishwasher or sanitizing unit.
• Maintain sanitation of the kitchen and prep areas.
• Assist with bussing tables and supporting service during shifts.
• Restock supplies during service hours and breakdown after events.
• Keep kitchen clean, orderly, and safe, including floors and counters.
• Follow directions from lead cook or manager on duty.
• Assist other roles during downtime.

Job description

Clean and sanitize dishes so that cooks and servers have the supplies they need to prepare food and serve customers. Follow thorough dishwashing procedures to fully sanitize each dish according to health and safety standards.

What You'll Do

• Sort dishes in the dish pit into different categories
• Spray down each tray of dishes and scrub by hand or place into industrial dishwasher
• Maintain sanitation of the kitchen and food preparation areas
• Always follow safe food handling and service practices
• Bus and clean tables during service
• Maintain kitchen in orderly and clean fashion
• Wash dirty dishes as soon as possible
• Restock any necessary items during service hours
• Breakdown kitchen including floor, equipment, and counter tops
• Ensure mop heads are rinsed and hung properly to dry and buckets are emptied
• Take direction from lead cook or manager on duty
• Breakdown of events including tables, chairs, wares, kitchen equipment, and linens
• Assist other roles during down time

What We're Looking For

• ServSafe Training or equivalent approved Food Handlers Certification
• Ability to communicate effectively with guests and staff
• Ability to stand during entire shift
• Ability to reach overhead, utilize both hands, bend over, stoop and kneel
• Ability to operate light equipment such as vacuum cleaners and dishwashers
• Must be capable of climbing and descending stairs during shift
• Must be able to work in an outside environment

Physical Requirements

Heavy work — exerting force frequently and constantly lifting, carrying, pushing, pulling or otherwise moving objects. Long hours sometimes required. Must be able to stand during entire shift.
