Dietary Manager (Project Management)
Responsible for directing and participating in food preparation and service to ensure safety, quality, and adequacy according to physicians' orders and approved menus. Maintains cost control and adheres to budget guidelines. Plans and assists with holiday and special meal preparations and functions. Supervises all dietary staff and functions, including hiring, orientation, training, discipline, and termination when necessary.
Ensures proper food storage and handling in compliance with current state and federal guidelines. Processes new diet orders and updates diet cards based on nursing staff inputs. Maintains sufficient staffing levels and prepares staff schedules, addressing any changes promptly.
Maintains a safe, sanitary, and organized kitchen and food storage area. Transmits food orders and supplies, documents menu changes, and communicates with dietitians. Participates in QA and IDT meetings as assigned. Checks trays for accuracy before delivery and inspects the dietary department regularly for safety and sanitation standards.
Plans and delivers in-service education programs for dietary staff. Investigates on-the-job injuries, implements corrective actions, and retrains staff as needed. Ensures compliance with all regulations and maintains security in the dietary department. Coordinates dietary services with nursing and activities departments.
Conducts monthly nutritional assessments and screenings for residents at nutritional risk, explaining diets, recording preferences, and promoting quality food service. Supervisory responsibilities include overall management of dietary staff.
