We are seeking a Certified Dietary Manager to work in a Skilled Nursing Facility.

Summary of Work

Responsible for the daily operations of the food-service department according to facility policies, procedures, and federal/state regulations. Provides leadership to ensure food quality, safety standards, and client expectations are met. Maintains records related to personnel, income, expenditures, food, supplies, inventory, and equipment.

Operations Management
  • Recruit, interview, hire, train, coach, evaluate, reward, discipline, and terminate employees as needed.
  • Develop work schedules to ensure adequate staffing.
  • Create and monitor budgets for cost-effectiveness.
  • Manage revenue-generating services.
  • Work cooperatively with clients, staff, physicians, vendors, and service providers.
Food-service Management
  • Specify standards and procedures for food preparation.
  • Participate in menu planning, considering client preferences, therapeutic diets, and industry trends.
  • Inspect meals for appearance, palatability, temperature, and timely service.
  • Manage special nourishment and supplemental feedings.
  • Ensure food is prepared according to schedules, menus, and recipes.
Food Safety
  • Ensure safe receiving, storage, preparation, and service of food following HACCP guidelines.
  • Maintain cleaning schedules and equipment sanitation.
  • Ensure staff adhere to sanitation and safety practices.
Nutrition and Medical Nutrition Therapy
  • Process diet orders and updates.
  • Develop dietary plans in cooperation with RDs and physicians.
  • Review nutritional plans and document concerns.
  • Support the IDT in nutrition assessments and plans.
Qualifications
  • Graduate of Dietary Manager’s Course or equivalent food-service program.
  • Successful completion of Certified Dietary Manager exam.
  • Minimum two years’ experience in food-service management, healthcare experience preferred.
Skills
  • Motivating, coaching, supervising food-service staff.
  • Intermediate computer skills.
  • Effective communication and organizational skills.
  • Knowledge of relevant legislation and regulations.
