Job summary

Colonial Williamsburg Foundation seeks a Sous Chef for Williamsburg Lodge Culinary to drive culinary operations, menus, and quality. You will train and supervise kitchen teams, control costs, forecast demand, and ensure exceptional guest experiences in a historic, on-site setting.

The role emphasizes menu development, standard adherence, and collaboration with Guest Service leadership to deliver outstanding hospitality across multiple outlets and events.

Qualifications

• Culinary Degree and 5 years’ experience accompanying professional managerial experience with the hotel and restaurant industries.

Responsibilities

• Insure that the culinary and utility staffs are performing to the established standards.
• Prepare foods correctly for service according to the standards of the specific dish and meal periods.
• Develop and cost breakfast, lunch and dinner menus in accordance with the brand policies.
• Set the example and ensure kitchen standards are followed in a positive and professional manner.
• Oversee expediting of breakfast, lunch, and dinner shifts to maintain service flow.
• Interact with Guest Service Managers to manage large parties and events.
• Oversee production of prep items ensuring recipe adherence and timely output.
• Ensure adherence to recipe cards and plate presentation.
• Collaborate with purchasing to ensure fresh, cost-effective ingredients.
