Qualifications

• Minimum one year of food prep or related work preferred.
• Previous supervisory experience preferred.
• Ability to motivate and supervise inmates in a correctional setting.
• Must obtain a food safety certification.

Responsibilities

• Adhere to and maintain production guidelines and logs.
• Supervise inmates in food preparation and tray assembly.
• Ensure timely, efficient meal service and compliance with Aramark guidelines.
• Participate in preparation and serving of meals.
• Print and distribute recipes.
• Direct inmates in the use of Aramark recipes and train on proper cooking procedures.
• Ensure proper portions and accommodate dietary requirements.
• Obtain accurate daily population counts and review with staff.
• Acknowledge security policies; keep storage areas secured.
• Return kitchen tools and keys to designated areas.
• Plan work and sanitation schedules; ensure adherence by all staff.
• Assist in inventory, receiving, and storing food items; requisition as needed.
• Support the 5 P’s: Participation, Pulls, Production, Portion control, Postproduction.
