Compass Group’s Gourmet Dining & Chartwells Higher Education is seeking a Cook Supervisor for Rowan University in Glassboro, NJ. This full-time role oversees a high-volume campus kitchen and supervises a team to ensure food quality, safety, and timely service.

Schedule options include Sunday-Thursday or Tuesday-Saturday, with primarily night shifts. Applicants should have large-batch production experience and direct management of at least 20 staff, plus ServSafe certification, and a commitment

• Prior high-volume / large batch production experience.
• Direct management of a minimum of 20 people.
• ServSafe certification or equivalent.

Responsibilities

• Trains employees; plans, assigns and directs work; appraises performance; rewards and disciplines associates; addresses complaints and resolves problems.
• Advises management of purchasing requirements with a focus on minimizing waste and avoiding product shortages.
• Uses approved recipes and production standards to ensure quality, temperatures and standard portions.
• Operates and cleans equipment per department procedures.
• Stores, labels and dates food items per policy; maintains rotation to minimize spoilage.
• Follows HACCP guidelines to ensure food safety.
• Operates equipment safely and per policy.
• Assists in serving meals and gathers customer feedback during meals.
• Performs other duties as assigned.

Job Summary

Summary: Directly supervises food-service associates in accordance with policies, procedures and applicable laws.

Essential Duties and Responsibilities

• Trains employees; plans, assigns and directs work; appraises performance; rewards and disciplines associates; addresses complaints and resolves problems.


• Advises management of purchasing requirements with a focus on minimizing waste and avoiding product shortages.


• Uses approved food recipes and production standards to ensure proper quality, serving temperatures and standard portion control.


• Operates and cleans equipment in accordance with department procedures after each use.


• Stores, labels and dates food items according to policy; maintains established food rotations in storage in order to minimize spoilage and waste.


• Follows HACCP guidelines to ensure quality and safety of food supply.


• Operates food-service equipment in a safe manner and according to established policies and procedures.


• Helps serves meals; remains present during scheduled meal periods to receive customer comments and feedback.


• Performs other duties as assigned.
