Hyatt Regency Tamaya Resort & Spa seeks a Specialty Dining Cook for Corn Maiden, delivering a refined Southwestern dining experience.

You will prepare elevated menu items with precision, using locally sourced ingredients and scratch techniques, in a high-end setting that honors Santa Ana Pueblo traditions.

Qualifications

  • Strong working knowledge of kitchen techniques, high-volume prep, and food safety standards.
  • Passion for Southwestern, Indigenous, and locally inspired cuisine.
  • Ability to follow detailed recipes, plating standards, and chef direction.
  • Flexibility to work nights, weekends, and holidays as business needs demand.
  • Must be able to stand for extended periods and lift up to 50 lbs.
  • Comfortable in working in an open kitchen.

Responsibilities

  • Prepare, cook, and plate specialty menu items according to Corn Maiden recipes and presentation standards.
  • Execute techniques appropriate for fine dining, including grilling, roasting, sautéing, and specialty methods unique to Southwestern cuisine.
  • Maintain a clean and organized workstation in compliance with food safety and sanitation
  • Assist with prep duties, stock rotation, and kitchen organization to support daily operations.
  • Uphold the cultural values and storytelling behind the menu and Corn Maiden dining experience.
  • Support a positive, team‑oriented kitchen environment.

Nestled within the Hyatt Regency Tamaya Resort & Spa, Corn Maiden offers an elevated and authentic Southwestern dining experience inspired by the land and the deep-rooted traditions of the Santa Ana Pueblo. Our culinary team highlights what is grown and raised within the Rio Grande River Basin, creating a menu shaped by agricultural abundance, regional flavors, and Pueblo history. Many ingredients come directly from our onsite Tamaya garden, allowing us to honor sustainable practices and serve food that is both nourishing and culturally meaningful.

Position Summary

The Specialty Dining Cook plays a key role in delivering a refined dining experience through exceptional culinary execution in a high‑end, Southwestern‑inspired restaurant setting.
