Job summary

Hollywood Gaming Mahoning Valley Race Course in Youngstown, OH is seeking a Cook to prepare breakfast items, entrees and desserts with high-volume accuracy and speed. You will ensure food safety, proper storage, and timely service for guests and staff.

Responsibilities

• Provide fast, friendly, professional and responsive customer service to culinary team members and guests.

• Employ proper cooking methods, cook to specifications, and handle, store and rotate food per health and safety standards.
• Wipe and maintain cleanliness of workstations; maintain par levels and rotate stock.
• Operate and maintain equipment and utensils according to guidelines and safety procedures.
• Be aware of current events and guide guests accordingly.

• Providing fast, friendly, professional and responsive customer service to culinary team members and guests. Greets, and makes welcome, each guest approaching their station.
• Maintaining current and accurate information regarding food items.
• Preparing food items per guest order as required including, but not limited to, breakfast items, entrees and desserts according to guest request.
• Employs proper cooking methods, cooks to specifications, and handles, stores and rotates food properly in accordance with established health and safety standards.
• Slicing, dicing, chopping and prepare raw products.
• Carving meats, portioning food on serving plates, add gravies and sauces, and garnish plates as required.
• Wiping counter areas, sinks and floors as required to maintain a clean and safe work station.
• Maintaining cleanliness of designated areas as directed in accordance with established health and safety standards.
• Maintaining par levels of operating supplies and food product for each workstation obtaining replacement stock from warehouse inventory in accordance with procedure.
• Operating and maintaining all equipment and utensils as required in accordance with established guidelines and safety procedures.
• Knowing and promoting current events and programs and can give guests directions to all area.

Qualifications:

• Must be able to obtain Serve Safe certification.
• Knowledge of kitchen sanitation, operation, and maintenance of kitchen equipment.
• Basic knowledge of food preparation techniques.
• Required to taste and smell foods.
• Knowledge of weights, measures and recipe yield.
• Possess and maintain culinary tools to perform the necessary job functions.
• Must be able to tolerate areas with high temperatures.
• Must be able to tolerate industry standard chemicals used for cleaning and sanitizing.
• Must present a well-groomed appearance.
• Other duties, as needed.

Supervisory Responsibilities:

This job does not have any supervisory responsibilities.

Education and/or Experience:

One year prior experience as cook in high volume food service operation; High School diploma; or equivalent combination of education and experience.

Language Skills:

Ability to read and interpret documents in English, such as safety rules, operating and maintenance instructions and procedure manuals. Ability to read and communicate verbally in English. Written communication skills in in English may also be required.

Mathematical Skills:

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to perform these operations using units of America money and weight measurement, volume and distance. Possess ability to operate an adding machine and have basic computer skills.

Reasoning Ability:

Ability to apply commonsense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.

Employee must be able to qualify for licenses and permits required by federal, state and local regulations.
