About Marquette: Headquartered in Paducah, Kentucky, and founded in 1978, Marquette is a leading provider of inland marine transportation services. Our company operates over 130 towboats on the Mississippi River System, Gulf-Intracoastal Waterway, and near-shore coastwise market. We control over 1,000 dry cargo barges and have additional offices in St. Rose, LA, Lockport, LA, and La Porte, TX. With over 1,500 vessel and shore-based employees, Marquette is the largest provider of independent towing services within the inland waterways. We are the only fully integrated fleet in the industry capable of such operations.

Responsibilities:
  1. Prepare all food products, including specialty diets, to meet dietary or nutritional restrictions.
  2. Handle, prepare, and store all food products and equipment according to sanitary standards and safety guidelines.
  3. Create a variety of menu items, rotating meals weekly based on inventory.
  4. Plan menus to effectively utilize leftover food and minimize waste.
  5. Perform quality assurance on all food items, rejecting damaged or spoiled products.
  6. Prepare grocery orders to meet daily menu requirements.
  7. Coordinate with the Captain to maintain vessel food budgets.
  8. Operate standard cooking equipment and utensils for large-scale food preparation.
  9. Clean galley equipment, appliances, and work areas to ensure cleanliness and functionality.
  10. Manage multiple duties efficiently and in a timely manner.
  11. Interact effectively with people from diverse backgrounds and age groups.
  12. Perform physical tasks required by the role within working conditions.
Qualifications:
  • High school diploma preferred.
  • 2-5 years of experience in large-scale food preparation (e.g., school cafeterias, military, restaurants).
  • Ability to understand and follow safety and work instructions.
  • Physical activities include walking, standing, climbing, bending, lifting (up to 40 lbs.), reaching, pushing/pulling, and handling/digital dexterity.
  • Ability to withstand exposure to hot surfaces, food, odors, enclosed areas, smoke, or steam.
  • Must be 18 or older to board a vessel.
  • Possession or ability to obtain a Transportation Worker Identification Credential (TWIC).
  • Proficiency in speaking, reading, and writing English as per USCG regulations.
  • Availability to be away for 28 days at a time with 14 days off.
