Job summary

The Role

This is a very rare opportunity to become part of the Rough & Tumble leadership team and lead the kitchen operations into our next phase. The person selected for this role will be deeply experienced in BOH leadership, lead with a kind and respectful demeanor and a sense of humor, have a background in high-volume menu production, and be deeply experienced in kitchen operations management with an inclusive approach to everything you do. You inspire, collaborate, support and lead an incredible team, many of whom have been with R&T for years and are dedicated to not just the company but one another. You are highly experienced in managing labor, food costs, scheduling, ordering, inventory, performance, and have highly respected vendor and team communication and relationship skills. You value collaborative leadership and are looking to grow with a team that grows with you. You are experienced managing kitchens across multiple locations, and with inter-company commissary prep process, and for both internal and external events and popups with an often national media presence. You understand the importance of consistency and the value of craveable foods that feed the soul and build community. Key Responsibilities
  • Lead all kitchen operations for two locations, including prep commissary, events, and catering
  • Lead, hire, train, and mentor an incredible BOH team in an open kitchen environment with trust, respect, humor, inclusivity, and kindness that continues are incredibly positive culture
  • Manage seasonal menus and collaborate directly with our founder on menu development with a focus on high-quality, craveable meals with a scratch and local focus built for game-day volume and across brunch, lunch, dinner, as well as for events, popups and catering
  • Manage strong vendor relationships, contract and product pricing negotiations, and food costing with experience using inventory, pricing, and reporting technology
  • Manage BOH equipment maintenance and vendor relationships, maintaining the highest standard of food safety, sanitation, workplace safety, and company standards
  • Manage food and labor costs through accurate ordering, disciplined portioning, menu costing, and waste reduction
  • Analyze, recommend, and implement new strategies and procedures to meet standards, budgets, and targets, ensuring consistency and quality in food quality and presentation across locations
  • Collaborate closely with the our founder and management team on service, private events, watch parties, and growth planning
What You Bring
  • 8-12+ years of progressive kitchen leadership experience, including hands-on line/chef work, menu development, and experience managing and leading teams and operations across multiple locations
  • Proven experience as a hands-on executive chef or culinary director in a high volume, upscale restaurant environment that prioritized scratch cooking and local sourcing
  • Strong background in menu development, food costing, and kitchen operations
  • Extensive proven experience leading successful and long-tenured BOH teams across multiple locations
  • Strong command of kitchen and BOH financials, food costing, labor management, and P&L
  • Strong organizational, leadership, communication, and team-building skills
  • Must have a proven ability to operate effectively in an English/Spanish bilingual environment

  • Flexibility, humor, kindness, and a collaborative/shared-ownership and team-oriented approach to all you do
  • Experienced working with standard business operating software such as Outlook, Word/Docs, Excel/Sheets; as well as kitchen operating, reporting, inventory, costing, scheduling, and management software such as Toast, XtraChef, Margin's Edge, or similar
  • Must be able to work weekends and evenings
  • Ability to lift up to 50 pounds and spend extended time standing and walking
  • Possess all state required permits (Certified Food Protection Manager a plus)
What We Offer
  • This role is a salaried exempt role paying in the range of $85,000 to $105,000/yr base salary based upon experience with bonus-earning opportunities
