Description

Summary/Objective

The Certified Dietary Manager (CDM) is responsible for directing and coordinating food service operations across the long-term care facility, critical access hospital, and staff meal service. The CDM ensures the delivery of nutritious, safe, and high-quality meals in compliance with all dietary regulations and guidelines. This role includes overseeing kitchen staff, managing food safety and sanitation standards, and participating in hands-on cooking. The CDM is also responsible for developing menus and managing food ordering and inventory to meet the nutritional needs of all served populations.

Essential Functions

  1. Plan and prepare meals that meet the dietary needs of long-term care residents, hospital patients, and staff.
  2. Develop and implement weekly and monthly menus in coordination with dietitians and in compliance with dietary guidelines and resident/patient preferences.
  3. Oversee food ordering and inventory management, ensuring adequate stock and minimizing waste while maintaining cost control.
  4. Supervise and schedule dietary staff, providing guidance, training, and performance feedback.
  5. Ensure all food safety and sanitation practices meet regulatory requirements (e.g., CMS, KDHE, USDA, and local health codes).
  6. Maintain documentation including production sheets, sanitation logs, and inventory records.
  7. Collaborate with nursing and interdisciplinary teams to ensure residents and patients receive appropriate nutritional care.
  8. Assist with preparing meals and serve as lead cook as needed to support kitchen operations.
  9. Respond to dietary-related concerns and make necessary adjustments based on feedback.
  10. Participate in facility inspections and surveys; prepare reports and implement corrective actions as necessary.
  11. Provide regular in-service education and ongoing training for dietary staff.
  12. Utilize dietary software and electronic health records for meal tracking and compliance.
  13. Support modified diets and special requests, including allergies, textures, and cultural preferences.
  14. Communicate effectively with all departments and maintain a positive working environment.
  15. Maintains involvement in department QA.
  16. Maintains HAACP procedures at all times during food production.
  17. Safeguards the confidentiality of all resident information.
  18. Attends and completes facility wide in-services and meetings.
  19. Performs other related duties as assigned.

Supervisory Responsibility

This position is responsible for the supervision of Cooks/Aides.

Work Environment

This job operates in a health care setting. This role requires regular walking to various locations around the hospital. This role also routinely comes into contact with patients who may have contagious illnesses.

Physical Demands

The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. While performing the duties of this job, the employee is regularly required to talk and hear. This position is very active and requires standing, walking, bending, kneeling and stooping all day. The employee must frequently lift or move items weighing over 20 pounds.

Position Type and Expected Hours of Work

This is a full-time position in a health care facility open 24 hours a day, 365 days a year. Rotating shifts as well as holiday and work during inclement weather will be required.

Travel

No travel is expected for this position.

Required Education and Experience

  1. Certified Dietary Manager (CDM) certification.
  2. Proficiency in meal planning, food preparation, and regulatory compliance.
  3. ServSafe or equivalent food safety certification (Can be achieved after hire).

  5. Ability to lift up to 50 pounds and work on your feet for extended periods.

Preferred Education and Experience

  1. Two years of experience in a hospital, nursing care facility or other related medical facility.
