Job summary

The University of Nebraska–Lincoln is seeking an Assistant Food Service Manager to oversee the operations of a university residence hall dining center in Lincoln, NE. You will lead a team to ensure safe, high-quality meals, supervise staff, and manage menus, forecasting, and purchasing.

Qualifications

• Associate’s or equivalent education/experience in food-related, business, or hotel/restaurant management.
• Experience in high-volume dining operations.
• Knowledge of cost controls and inventory management.

Responsibilities

• Provide a safe and inviting atmosphere, healthful meal choices, and quality service in a community-focused dining environment.
• Participate in menu planning, volume forecasting, and purchasing for all meals and events.
• Work with team leaders on development of menus.
• Develop and communicate daily food production plans with dining center staff.
• Assist with daily food production in all areas.
• Plan special dining service events including menu planning, staffing, setup, and billing.
• Assist with dining center work schedules for regular and temporary staff.
• Assist with interviewing, hiring, scheduling, training and evaluations for student staff.
• Control food and labor costs within budgeted objectives and suggest improvements.
