Job summary

University of Nebraska–Lincoln is seeking an Assistant Food Service Manager to assist with the management and supervision of the residence hall dining center. The role includes menu planning, forecasting, staff development, and cost control to deliver high-quality service for students and university guests.

The position involves daily food production, event catering, and scheduling for student staff, with opportunities to contribute to a welcoming campus dining experience and professional growth

Qualifications

• Associate’s or equivalent education/experience in food-related, business, or hotel/restaurant management field.
• Food service management experience in a high-volume campus or commercial dining operation.
• Knowledge of cost controls, inventory controls and food safety/sanitation programs.
• Ability to supervise large quantity food production and handle personal computers, word processing, spreadsheets, e‑mail and internet.
• Food Handler’s permit or ability to obtain by passing the Safety and Sanitation test required.

Responsibilities

• Provide a safe and inviting atmosphere, healthful meal choices, and quality service in an environment that promotes community, growth, and education of our students, staff, faculty and guests.
• Participate in menu planning, volume forecasting, and food and supplies purchasing for all meals and other food-related activities for students, staff, faculty guests and conference attendees.
• Work with team leaders and management staff on development of menus.
• Develop and communicate daily food production plans and responsibilities with the dining center team leaders and staff.
• Assist with daily food production in all areas (preparation, serving, and cleanup as needed).
• Plan special dining service events (within and outside the dining center). Includes menu planning, food production, staffing, decorations, set-up, deliveries as needed, billings for events, and clean up.
• Assist with the preparation of the dining center work schedules for regular and temporary staff.
• Assist with the interviewing, hiring, scheduling, training and evaluations for student staff.
• Control food and labor costs within budgeted and/or pre-established objectives. Evaluates and makes recommendations to stay within budget.
