Campus Dietitian - Parkhurst Dining
Job Summary
The Campus Dietitian is a key member of the management team, reporting to the General Manager and collaborating closely with culinary leadership. This role leads the nutrition program for the account, including allergen management, dietary accommodations, wellness initiatives, and sustainable dining practices. The Campus Dietitian partners with culinary leadership on menu development, recipe compliance, and ingredient transparency. Responsibilities include delivering allergen education and training, supporting guest dietary needs, and executing wellness and engagement initiatives. The Campus Dietitian regularly interacts with team members, students, guests, and other campus partners to ensure a safe, inclusive, and informed dining experience. All nutrition and dietary programs are executed in alignment with company standards to support student health, wellness, and satisfaction. The Campus Dietitian provides nutrition education and guidance within the scope of professional practice, does not replace clinical medical care, and refers students with medical or therapeutic needs to appropriate healthcare providers.
Essential Functions
Student & Guest Wellness Leadership - 50%
- Provide nutrition education and wellness guidance within scope of practice, document interactions appropriately, and refer students to healthcare providers as needed, following relevant confidentiality rules and regulations and company and campus protocols.
- Partner with the culinary team to accommodate student dietary needs as needed, which could include coordinating specially prepared meals, sourcing prepackaged options, or fulfilling special requests when standard menu offerings do not meet documented needs.
- Collaborate with Student Accessibility/Disability Services and Campus Health Services to ensure proper registration, medical documentation, and compliance with meal plan exemptions and dietary accommodations.
- Conduct individualized dining tours for students and families to familiarize them with campus dining locations and menu options aligned with specific dietary needs and restrictions.
- Lead and coordinate sustainable dining initiatives that promote wellness, including plant-forward programming, local sourcing, and environmentally responsible practices.
- Ensure the dining program reflects and supports the diverse needs of the campus community, including Athletics, Student Health, Faculty and Staff, and First-Year Students.
- Collaborate with the Athletic Department and Performance Dietitian to provide nutrition education, training, and support for student-athletes.
- Partner with the Marketing Manager and Corporate Dietitians to develop and execute wellness programs, educational events, and resources across multiple topics (e.g., wellness fairs, sports nutrition, faculty wellness, National Nutrition Month, whole grains).
- Lead engagement activities such as tabling, sampling, educational series, and promotions to encourage healthy dining habits.
Menu Strategy & Optimization – 25%
- Manage and maintain the recipe database (NetMenu), ensuring all recipes are accurate, up to date, and compliant with dietary designations.
- Support management in menu planning, product placement, and pricing strategies that promote health, wellness, and guest satisfaction.
- Validate Top 9 allergens and special dietary designations (gluten‑free, vegetarian, vegan, halal) for all recipes.
- Conduct routine menu and recipe audits to ensure compliance with company standards, regulatory requirements, and client expectations, partnering with culinary leadership to guide ingredient substitutions and maintain balanced nutrition, portioning, ingredient standards, and dietary inclusivity.
- Identify opportunities to improve nutritional value, cost efficiency, and guest satisfaction across all menu offerings.
- Ensure menu communication is consistent and accurate across all platforms, including digital menus, signage, labeling systems, and online tools.
Training & Regulatory Leadership – 25%
- Ensure accurate portioning, allergen identification, and labeling within the menu display system to support guest safety and informed choices.
- Oversee the AllerTrain program, tracking completion and delivering supplemental training as needed.
- Conduct allergen and cross-contact audits across dining locations to ensure compliance with procedures, regulations, and food safety standards.
- Partner with leadership to ensure team members consistently execute food safety, allergen, and dietary accommodation protocols.
- Serve as a subject matter expert on nutrition, allergens, dietary accommodations, and food labeling standards.
- Identify gaps in knowledge or execution and develop targeted training or resources to address opportunities and mitigate risk.
- Maintain documentation and records to ensure audit readiness and consistent compliance across locations.
Qualifications
- Registered Dietitian (RD/RDN) with a minimum of 2 years of relevant experience.
- Licensure in the State of [Insert State] (if required).
- Collaborative, self‑directed, and motivated to lead initiatives independently.
- Excellent interpersonal, communication, and leadership skills.
- Demonstrated ability to lead and mentor other managers or supervisors.
- Strong planning and organizational skills to consistently meet deadlines.
- Proficient in Microsoft Office applications.
- Familiarity with Health At Every Size® and Intuitive Eating principles.
- Knowledge of scope of practice limitations for RDNs and understanding of referral procedures.
- Familiarity with campus policies for student privacy, medical documentation, and dietary accommodations.
- Follows established documentation and referral protocols to mitigate risk in providing nutrition education and dietary guidance.
