We are seeking a talented and detail-oriented Butcher to join our culinary team and play a critical role in maintaining the premium standards that have made CUT one of New York's premier fine dining destinations.

What You'll Do
  • Fabricate, portion, trim, and prepare premium cuts of beef, veal, lamb, pork, poultry, and seafood according to CUT standards.
  • Inspect products for quality, freshness, and consistency.
  • Maintain proper yields while minimizing waste and maximizing product utilization.
  • Support daily production needs for service, banquets, and special events.
  • Ensure all products are properly labeled, stored, and rotated following FIFO procedures.
  • Maintain a clean, organized, and sanitary work environment in compliance with all health and safety regulations.
  • Assist with inventory management, receiving, and stock organization.
  • Collaborate closely with Chefs and kitchen leadership to support menu execution and operational excellence.
What We're Looking For
  • 2+ years of professional butchery experience, preferably in a high-volume or fine dining environment.
  • Strong knife skills and knowledge of meat fabrication techniques.
  • Understanding of food safety, sanitation, and proper product handling procedures.
  • Ability to work efficiently while maintaining exceptional attention to detail.
  • Strong organizational and time-management skills.
  • Ability to lift and move up to 50 pounds and stand for extended periods.
  • Availability to work flexible schedules, including evenings, weekends, and holidays.
