Graton Resort & Casino seeks a Sous Chef to support the Head Chef in a dynamic kitchen environment. The role focuses on recruiting and developing Team Members, driving menu concepts, and upholding health and safety standards to deliver exceptional guest experiences.

Responsibilities include overseeing kitchen activity, supervising line cooks, and collaborating with the farm team to source local ingredients for the restaurant program.

Qualifications

• Experience managing high-volume kitchen operations.
• Strong knowledge of health and safety guidelines.
• Ability to recruit and develop kitchen staff.
• Proven track record in menu item creation.

Responsibilities

• Redefine hospitality values in Graton Resort & Casino.
• Assist in creative development of new menu items and concepts; maintain concept pipeline.
• Supervise restaurant production kitchens and train Team Members.
• Plan menus for core menu, large party group menus, VIP Speakeasy secret menu.
• Work with the Graton farm team to utilize harvested produce in the restaurant program.
• Conduct monthly health inspections and ensure sanitation standards.
