Fogón and Lions, part of Concept 2 Table Hospitality Group, is seeking an energetic Bar Manager / Key Holder to lead the bar and delivery of an exceptional guest experience. You will guide a high-energy team, maintain standards, and own the operation while senior management is away.

Qualifications

• Previous Bar Manager, Lead Bartender, Key Holder, or restaurant leadership experience.
• Strong bartending and beverage knowledge.
• Experience in high-volume, full-service restaurant or bar.

Fogón and Lions is looking for an energetic, experienced, and hospitality-driven Bar Manager / Key Holder to join our leadership team.

As part of Concept 2 Table Hospitality Group, Fogón and Lions is a high-energy restaurant and bar built around great food, creative beverages, genuine hospitality, and strong guest relationships.

We're looking for a leader who understands that running a successful bar is about much more than making great drinks.

It's about leading people, creating energy, building relationships with guests, maintaining standards, controlling costs, and taking ownership of the operation.

As a Key Holder, you'll also be trusted to help lead the restaurant, make decisions, and protect our standards when senior management is not present.

Your Mission

Your mission is to create a bar guests want to return to and a team people want to be part of.

You'll lead from behind the bar and on the floor, supporting bartenders and service staff while maintaining the energy, professionalism, and hospitality that define Fogón and Lions.

You'll know your regulars.

You'll understand the numbers.

And you'll make sure the team is prepared to deliver an exceptional experience every shift.

Your success will be measured by the strength of your team, the loyalty of your guests, and the performance of your bar.

What You’ll Do

• Lead daily bar operations and maintain exceptional service standards.
• Train, coach, motivate, and develop bartenders and support staff.
• Create an energetic, welcoming, and professional bar atmosphere.
• Build genuine relationships with guests and develop a strong base of regular customers.
• Maintain consistency and quality in cocktails, wine, beer, spirits, and overall beverage service.
• Ensure recipes, pours, presentation, and service standards are followed consistently.
• Conduct pre-shift meetings and communicate priorities to the team.
• Monitor inventory, ordering, receiving, product rotation, and storage.
• Assist with liquor, beer, and wine cost management.
• Control waste, over-pouring, comps, and unnecessary product loss.
• Maintain proper bar organization, cleanliness, sanitation, and readiness.
• Support scheduling, training, and labor management.
• Work closely with culinary and front-of-house leadership to ensure seamless service.
• Handle guest concerns with confidence, professionalism, and urgency.
• Ensure responsible alcohol service and compliance with company policies and applicable regulations.
• Perform opening and closing responsibilities accurately.
• Complete cash handling, deposits, reports, and other Key Holder responsibilities as assigned.
• Secure the restaurant and ensure proper closing procedures are followed.
• Take ownership of the operation when senior management is not present.

The Leader We’re Looking For

You are comfortable being both a bartender and a leader.

You can jump behind the bar during a rush, talk with a regular at the counter, coach a bartender who needs support, solve a guest issue, check inventory, and help close the restaurant correctly at the end of the night.

You don't lead from the sidelines.

You lead through your presence.

You understand that hospitality and profitability must work together. You know that generous hospitality doesn't mean careless operations and that controlling costs should never come at the expense of the guest experience.

You hold people accountable while treating them with respect.

Most importantly, you understand that great bars aren't built by cocktails alone—they're built by people, energy, relationships, and consistency.

What We’re Looking For

• Previous Bar Manager, Lead Bartender, Key Holder, or restaurant leadership experience.
• Strong bartending and beverage knowledge.
• Experience in a high-volume, full-service restaurant or bar.
• Genuine passion for hospitality and guest relations.
• Strong leadership and team-development skills.
• Ability to build relationships with regular guests and create customer loyalty.
• Knowledge of spirits, cocktails, wine, beer, and beverage service.
• Understanding of beverage cost, inventory, ordering, portion control, and waste management.
• Strong cash-handling and closing skills.
• Ability to lead opening and closing restaurant operations.
• Strong communication, organization, and problem-solving skills.
• Ability to remain calm and make good decisions under pressure.
• Dependable, accountable, and comfortable taking ownership.
• Flexible availability, including nights, weekends, and holidays.
• Spanish speaking is a plus, but not required.
