Job Description

Omni Hotels & Resorts is seeking a Banquets Culinary Supervisor for Omni Atlanta Hotel at Centennial Park!

The Banquets Culinary Supervisor will ensure all prep items are prepared and stored to hotel specifications. This individual will also work with the chef to ensure expectations of all aspects of food production, standards, state, and federal guidelines, ECOSURE, and staffing are met.

Responsibilities

1. Positional expectations – working Supervisor, pulling shifts as needed.
2. Supervise daily food preparation for assigned areas.
3. Utilize a hands-on approach to training and developing kitchen staff.
4. Operate and lead by example.
5. Instill safety and sanitation habits in all employees.
6. Prepare all food items according to standard recipes and as specified on guest check, to ensure consistency of product.
7. Visually inspect, select, and use only food items of the highest standard in the preparation of all menu items.
8. Keep all refrigeration, equipment and storage of working areas in clean, working condition in order to comply with health department regulations.
9. Train associates on the importance of consistency in preparation and presentation, ensuring the level of quality, portion control and plate presentation is adhered to by department staff consistently.
10. Train associates on how to interact with internal/external guests and courteously solve internal requests.
11. Prep, stock and rotate line to ensure an ample supply of products is maintained.
12. Ensure ECOSURE, health compliance.
13. Fire all food for service and to serve online.
14. Maintain check cooking times and temperatures.
15. Follow all storage procedures when taking food out of walk-in and when returning food to walk-in.
16. Work closely with wait staff to exceed guest expectations.
17. Maintain cleanliness of work area at all times.
18. Maintain operation in compliance with ECOSURE, city, county, state health regulations.
19. Complete other duties as assigned by management.

Qualifications

1. Required to have at least 2 years culinary experience in a hotel or restaurant kitchen with a minimum of one year kitchen supervisory experience.
2. Proven culinary skills and ability to lead, develop, and motivate staff.
3. Must work well with others and train a staff to produce high volumes of work while maintaining quality per Omni standards.
4. Familiar with batch and quantity cooking in a high-volume restaurant.
5. Excellent written and verbal communication skills as well as organizational skills.
6. Familiar with Microsoft Office, Word, Excel, Outlook.
7. Basic mathematical skills and ability to adhere to recipes.
8. Self-motivated, with ability to work with limited supervision.
9. Ability to write and perform daily prep lists and par sheets.
10. Ability to work in a fast-paced high-pressure work environment while executing delegated tasks and assignments.
11. Culinary degree and/or formal training preferred.
12. Servsafe Food handler’s certification required.

Physical Requirements:

1. Must be able to lift, push, pull and carry moderate weight.
2. Must be able to walk/stand for extended periods of time, with frequent bending and twisting.
3. Must be able to utilize culinary tools (knives, commercial equipment, etc.) and taste/smell.

Working Environment:

1. Interior of hotel in restaurant and kitchen areas with exposure to humidity, steam and extreme temperatures.
2. Exposure to hazardous cleaning chemicals.

2. Microsoft Outlook, OnTrack, & Symphony.
