Guests can also enjoy a dynamic 20,000 square foot urban food hall and market connected to the hotel lobby. Transforming Liberty Street into a pedestrian thoroughfare, the market serves as a community gateway for hotel guests and locals alike, inviting the neighborhood in with the smells of freshly brewed Heine Brothers’ coffee, baked bread, and smoked barbecue.

Job Description

To provide and maintain high-quality standards and procedures in preparing and serving all banquet food.

Responsibilities
  1. Coordinate all banquet hot and cold foods, working alongside Garde Manger to ensure quality meets specifications and guarantees. Ensure the quality of banquet hot foods, main entrees, starches, and vegetables are of the highest quality available.
  2. Attend daily BEO meetings to verify guarantees and food products are correct. Communicate all guarantees and food changes to the Chef, Garde Manger, and Bakeshop.
  3. Work one to two days ahead of operation to ensure timely product delivery and adequate preparation for coverage.
  4. Oversee overall banquet food operations to ensure quality and quantity, maintaining good relationships with Banquet Managers and Captains. Communicate constantly to ensure proper counts, assist in reducing food costs and waste, and manage food returns.
  5. Coordinate with the Executive Steward on banquet equipment needs.
  6. Collaborate with the Executive Chef and Executive Sous Chef on cost control, payroll, and menu planning related to banquet operations.
  7. Coordinate with the Executive Sous Chef, Executive Chef, and Garde Manger.
  8. Conduct monthly training classes for immediate associates.
  9. Participate in menu development.
  10. Perform other duties as assigned by management.
Qualifications
  • Minimum of 2 years of experience in a similar role within a full-service convention hotel preferred.
  • Previous culinary leadership experience required.
  • Associate’s Degree or equivalent.
  • ServSafe Food Safety Certification required.
  • Food Handler's Certificate required.
