Job summary

Aerotek is seeking a Bakery Product Development Specialist for a 5-6 month contract in Richmond, CA. This hands-on R&D role focuses on formulation, pilot plant trials, and scaling bakery and oil-based products from concept to commercialization.

You will collaborate with R&D, operations, quality and commercial teams, conduct bench-top experiments, perform texture and shelf-life testing, prepare technical reports, and ensure GMP and food safety standards. Immediate start with pay $40-$45/hr.

Qualifications

• 3–10+ years of bakery product development or formulation experience.
• Degree in Bakery Science, Food Science, Culinology, Culinary Arts, or Pastry Arts.
• Experience developing breads, cakes, cookies, pastries, donuts, tortillas, or related baked goods.
• Strong knowledge of bakery ingredients, fats, oils, emulsifiers, and shortenings.
• Experience with bench-top formulation, pilot plant trials, and commercial scale-up.
• Ability to analyze data, solve technical challenges, and communicate findings effectively.
• Knowledge of GMPs, food safety programs, and quality systems.
• Strong written, verbal, and project management skills.

Responsibilities

• Develop and optimize bakery and oil-based product formulations.
• Conduct bench-top experiments, pilot plant trials, and product evaluations.
• Scale formulations from prototypes to commercial manufacturing.
• Analyze test results and provide technical recommendations.
• Perform texture analysis and shelf-life testing.
• Prepare SOPs, technical reports, and product specifications.
• Operate and maintain bakery lab and pilot plant equipment.
• Collaborate with R&D, operations, quality, and commercial teams.
• Support customer-focused development projects and presentations.
• Maintain accurate project records and documentation.
• Ensure GMP, food safety and lab safety compliance.
