Four Seasons Maui is seeking a skilled Pastry/Bakery role within our Food & Beverage division. The incumbent will prepare bread items per production schedules and banquet orders, ensuring quality and mise en place for breakfast, lunch, and dinner services.

The role requires a minimum of two years in culinary work, advanced culinary knowledge, and the ability to operate and clean extensive kitchen equipment, with Hawaii Food Handler's Card and TB clearance.

Qualifications

• Minimum two years culinary or related work experience.
• Advanced culinary knowledge is expected for this position.
• Ability to operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill.
• Hawaii Food Handler's Card
• Tuberculosis Clearance
• ServSafe (within 3 months)

Responsibilities

• Prepare bread items according production schedules and banquet event orders of consistent quality following recipe cards, as well as production, portion, and presentation standards; complete mise en place and set-up station for breakfast, lunch, and/or dinner service.
• Start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs.
• Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.
