Assistant Kitchen Manager (Food Services)

Our gourmet store in Melville, NY is seeking a full-time Assistant Kitchen Manager for its busy store. This individual will assist with supervising kitchen staff, managing the pantry and inventory, controlling food storage and preparation, and overseeing customer service. The candidate should have hands-on expertise in preparing gourmet dishes from scratch and the ability to supervise staff to deliver quality, timely food, ensuring customer satisfaction.

Responsibilities

1. Ensure all food items and products are stored, prepared, and served according to the kitchen's recipes, preparation, and portion standards.
2. Prepare dishes as per Uncle Giuseppe's company and store recipes, working as part of the team.
3. Assist the Kitchen Manager with hiring, training, scheduling, and other administrative functions.
4. Order kitchen materials and ingredients based on the store menu and inventory needs.
5. Supervise food preparation and ensure customer satisfaction.
6. Maintain a clean and safe working environment, adhering to safety and company policies.
7. Conduct daily and weekly inventories to maintain adequate stock levels.
8. Collaborate with department managers to create menu items, set pricing, and establish portion sizes.
9. Schedule shifts based on business needs.
10. Oversee employee training on kitchen equipment safety and proper handling of heavy and hazardous materials.
11. Perform other duties as assigned.

Requirements

• HS Diploma or equivalent.
• Minimum of 5 years of progressive experience in a restaurant/back-of-house environment.
• Knowledge of food safety rules, proper storage, handling, and preparation.
• Extensive experience preparing various food dishes, with a focus on Italian cuisine.
• Understanding of back-of-house administrative duties in a busy kitchen.
• Experience in training and mentoring kitchen staff.
• Proficiency in English communication.
• Strong supervisory and communication skills.
• Motivated with quick thinking abilities.

Working Conditions
