Job summary

One Haus in New York City is seeking an Assistant General Manager with a strong beverage background to partner with the General Manager in running all aspects of the restaurant. This leadership role seeks an operator who can shape the beverage program while also driving day-to-day operations.

The ideal candidate has 4+ years of restaurant management, deep wine, spirits and cocktail knowledge, hands-on ordering and inventory experience, and a proven track record of building or refining beverage

Qualifications

  • 4+ years of restaurant management experience, preferably with AGM or senior leadership responsibilities.
  • Strong beverage program knowledge across wine, spirits and cocktails, with hands-on ordering and inventory management.
  • Proven track record refining or building beverage lists in fine dining or steakhouse settings.
  • Excellent scheduling and labor management skills and ability to manage a high-volume operation.
  • Financially minded with experience owning P&L, cost controls, and vendor negotiations.

Responsibilities

  • Partner with the General Manager to oversee all restaurant operations and act as lead decision-maker in their absence.
  • Own beverage operations end-to-end: ordering, inventory management, vendor relationships, and cost control.
  • Collaborate on beverage lists with the beverage/wine team to keep the program current and profitable.
  • Build and manage FOH staff schedules across service, bar, and support roles.
  • Lead recruitment, training, and development of floor and beverage staff with the management team.
  • Monitor labor and beverage costs and overall P&L; identify efficiency and margin opportunities.
  • Ensure compliance with liquor licensing, health codes, and local regulations.
  • Represent the restaurant with VIP guests, private events, and key vendor relationships.
  • Drive service standards across the floor in tandem with Service Manager and leadership.

Key Responsibilities:
  • Partner with the General Manager to oversee all aspects of restaurant operations, standing in as the lead decision-maker in their absence
  • Own beverage operations end-to-end: ordering, inventory management, vendor relationships, and cost control
  • Collaborate on and help develop the wine and beverage lists, working alongside the beverage/wine team to keep the program current and profitable
  • Build and manage FOH staff schedules, ensuring proper coverage across service, bar, and support roles
  • Lead recruitment, training, and development of floor and beverage staff alongside the management team
  • Monitor labor costs, beverage costs, and overall P&L performance; identify opportunities for efficiency and margin improvement
  • Ensure compliance with liquor licensing, health codes, and all local regulations
  • Represent the restaurant with VIP guests, private events, and key vendor relationships
  • Drive service standards across the floor, working in tandem with the Service Manager and floor leadership
Ideal Candidate Profile:
  • 4+ years of restaurant management experience, ideally with AGM or senior
  • Deep beverage expertise — wine, spirits, and cocktail program knowledge — with hands-on ordering and inventory experience
  • Proven track record building or refining beverage lists in a fine dining or steakhouse setting
  • Strong scheduling and labor management skills
  • Financially minded, comfortable owning P&L, cost controls, and vendor negotiations
  • A true operator who can run the floor and the business — not just one or the other
  • High-volume, fine dining or steakhouse background strongly preferred; NYC experience
