Job summary

Management & Training Corporation is seeking a full-time Kitchen Supervisor at Marana Detention Center in Marana, AZ. You will supervise cooks and detainees, cook meals per menu and detainee count, and keep the kitchen safe and sanitary while enforcing security protocols.

The role requires a high school diploma or GED, two years of food service experience, a valid food handler’s permit, and US citizenship or lawful permanent residency. Overtime and preservice training are part of the job.

Responsibilities

• Supervise cooks and food service workers and oversee detainee labor in the area.
• Prepare and cook food according to menu and detainee count.
• Maintain kitchen equipment and keep areas sanitary at all times.
• Exercise judgment in incidents and determine when to involve security.
• Prepare foods for special facility events or visitors.
• Assist with cleaning kitchen areas after meals.
• Direct detainees in the food service area.
• Count and secure knives and controlled items at shifts’ start and end.
• Manage cart movements and ensure security of the food service area.
• Maintain regular onsite attendance and be prepared to work overtime.

$36.09 per hour | Full-time

Use your skills to manage the custody and security of detainees in the facility in compliance with Management & Training Corporation (MTC) and customer directives. You will directly supervise the cook II and directs the work of detainees assigned to the food service area.

What you will do

• Supervise and monitor work of cooks and food service workers, which includes long periods of walking and standing
• Prepare and cook quantity of food required according to menu and number of detainees.
• Maintain kitchen equipment in orderly workable condition. Ensure work area is safe, clean and sanitary always.
• Exercise judgement and use discretion when responding to incidents and determine whether to intervene or call security staff.
• Prepare foods as directed for special facility functions and visitors.
• Assist in cleaning kitchen work areas following each meal.
• Direct the work of detainees assigned to the food service area.
• Maintain the count and control of knives and other controlled kitchen tools. Provide a count of all control items at the beginning and end of each shift. Responsible for the security of the food service area.
• Requires the pushing and pulling of food carts.
• Regular and predictable onsite attendance is required.
• Incumbents are required to work overtime when directed to do so.
