Yaamava' Resort & Casino at San Manuel in Highland, CA seeks a Prep Cook under the direction of the Sous Chef – F&B to assist the Junior Chef in dim sum, Chinese BBQ and wok station prep, ensuring recipes are followed and production remains timely and sanitary.

The role emphasizes specialty cuisines (Chinese, Vietnamese, Korean, Japanese) with wok and dim sum experience preferred; duties include daily prep, inventory, labeling, and training kitchen staff.

Qualifications

• High School Diploma or GED required.
• Culinary Arts degree from accredited school required.
• Minimum three (3) years’ experience working as Prep Cook or similar role required.
• Related, relevant, and/or direct experience may be considered in lieu of minimum educational requirements indicated above.

Responsibilities

• Gather required paperwork, review the order ticket, provide pre-prepped ingredients and ensure all items are completed. Prepping includes: spices, meats, vegetables, sauces, noodles, rice and any ingredient needed.
• Perform larger prep work to support next day/shift; pre-prepping vegetables or meat and storing appropriately.
• Assist in daily inventory of product and requisitions to prevent shortages.
• Label and date all food items on their designated station and ensure FIFO; discard expired items and log waste.
• Ensure recipes are consistent in flavor, quality, and appearance; keep stations stocked for forecasted business flow.
• Demonstrate basic knife skills and knowledge of standard cooking methods; multitask to avoid service interruptions.
• Train and re-train kitchen personnel across all areas; assist with supervision.
• Communicate updates to co-workers and respond to emails from cooks and leads.
• Report discrepancies, accidents or concerns to the supervisor.
• Assist with special projects like monthly meetings, deli assistance, banquets, or events.
• Keep notes on production levels and daily observations.
