Job summary

Blackberry Farm, LLC in Walland, TN is seeking an AM Sous Chef to lead the morning kitchen operations at the Main House, delivering a 5-Star culinary experience for every guest. You will manage breakfast and lunch production, control labor and food costs, and coach the AM culinary team and stewarding staff.

A culinary degree and 2–3 years in food and beverage are required, with strong leadership and communication skills.

Qualifications

• A culinary degree from an accredited institution and 2-3 years of experience directly in the restaurant or hotel food and beverage field or 4-5 years of experience in the above areas.
• High School Diploma or equivalent required.

Responsibilities

• Oversee AM service and production for breakfast and lunch.
• Manage labor costs and staff scheduling.
• Develop and test menu items; train staff.
• Coordinate with Dining Room Management for service periods.
• Monitor food cost, waste, and supplier relations.
• Ensure HACCP plans and health department compliance.
• Maintain professional kitchen environment and teamwork.
