Position Summary
Prepare hot and cold foods using recipes, menu schedules, food safety and sanitation guidelines. Ensure standards for appearance, temperature and palatability of foods are met. Utilize tools for forecasting food quantities for preparation for residents. Maintain a safe, clean and sanitary work environment.
Key Responsibilities
As the Cook at a 78-bed substance use disorder residential facility, your main responsibility will be to oversee the preparation and delivery of meals to the residents. Your focus will be on providing nutritional balanced meals that are diabetic-friendly and incorporate farm-to-table ingredients.
- Menu Planning: Develop menus that offer a variety of nutritious and well-balanced meals, considering dietary restrictions and preferences of residents.
- Meal Preparation: Prepare meals according to recipes, ensuring proper temperature and food safety standards. Focus on diabetic-friendly options, limiting added sugars and carbohydrates.
- Farm-to-Table Approach: Incorporate fresh and locally sourced ingredients to enhance nutritional value and taste.
- Dietary Accommodations: Meet specific dietary needs such as vegetarian, gluten-free, and lactose-free diets.
- Kitchen Management: Oversee daily kitchen operations, including inventory, equipment maintenance, and sanitation.
- Staff Training and Supervision: Train and supervise kitchen staff, fostering a positive work environment.
- Budget Management: Handle purchasing, cost control, and waste minimization, ensuring quality and nutrition are maintained.

Essential Duties And Responsibilities
- Produce hot and cold foods per guidelines.
- Forecast food needs for current and future days.
- Complete routine and non-routine assignments in assigned areas.
- Follow guidance from supervisors and dietitians regarding food preparation.
Cleaning and Organization
- Maintain a clean and organized work environment.
- Perform cleaning duties according to sanitation standards, including equipment and area cleaning.
- Properly handle chemicals and organize items to prevent damage.
- Report items not meeting health standards.
- Restock supplies as needed.
Safety and Sanitation Procedures
- Use proper body mechanics to prevent harm.
- Follow sanitation and infection control procedures.
- Report malfunctioning equipment.
- Use equipment only after proper training.
Miscellaneous Activities
- Participate in training and organizational activities.
- Minimize waste of food and supplies.
- Engage in quality assurance activities.
- Assist in training new employees.
- Follow sanitation procedures and food safety guidelines.
Supervisory Responsibilities
This position oversees Dietary Assistants.
Qualifications
Must have a High School Diploma/GED, experience in cooking in a similar setting, ability to follow instructions, and a clear Healthcare Registry report.
Preferred Qualifications
- Culinary degree or certification.
- Experience in diabetic-friendly and balanced meal preparation.
- Two years of food service cook experience, preferably institutional.
- ServSafe certification.
