Qualifications

  • Proven experience as a cook specialising in Northern Indian cuisine.
  • Strong knowledge of spices, ingredients, and traditional cooking methods.
  • Experience operating tandoori ovens is an advantage.
  • Ability to work in a fast-paced kitchen environment.
  • Physically fit and able to stand for long hours.
  • Willing to work shift hours, weekends, and public holidays.
  • Basic understanding of kitchen hygiene and food safety practices.

Responsibilities

  • Supervise, prepare and cook Northern Indian dishes, including tandoori items, curries, and breads.
  • Operate and maintain tandoori ovens, gas stoves, and kitchen equipment safely.
  • Ensure consistency in taste, presentation, and portion control.
  • Assist in menu planning and recipe standardisation.
  • Maintain cleanliness and hygiene of the kitchen in compliance with SFA and MOM regulations.
  • Monitor food quality, freshness, and proper storage of ingredients.
  • Work closely with kitchen team to ensure smooth daily operations.
  • Minimise food wastage and follow cost-control practices.
  • Comply with workplace safety, food safety, and company policies.

Job Description

We are seeking an experienced Restaurant Manager specialising in Northern Indian cuisine to join our kitchen team. The successful candidate will be responsible for ensuring that the kitchen prepares authentic Northern Indian dishes while maintaining high standards of food quality, hygiene, and kitchen operations.

Key Responsibilities
  • Supervise, prepare and cook a wide range of Northern Indian dishes , including but not limited to:
    • Tandoori items (e.g. naan, roti, kebabs)
    • Curries such as butter chicken, dal makhani, paneer dishes
    • Rice dishes, gravies, and traditional breads
  • Operate and maintain tandoori ovens, gas stoves, and kitchen equipment safely
  • Ensure consistency in taste, presentation, and portion control
  • Assist in menu planning and recipe standardisation where required
  • Maintain cleanliness and hygiene of the kitchen in compliance with SFA and MOM regulations
