in Singapore is seeking an experienced kitchen supervisor to assist the Executive Chef in managing daily operations, overseeing Wok, Dim Sum, BBQ/Roast, and Prep stations, and ensuring authentic Cantonese and regional Chinese standards with impeccable presentation. You will mentor station chefs, enforce food safety and allergen controls, manage inventory and costs, and collaborate on seasonal menus and promotional recipes.

Formación

• Minimum 5–8 years of culinary experience in high-end Chinese or Cantonese fine dining establishments or luxury hotel outlets
• Mastery of wok handling, knife skills, traditional braising, and specialized European techniques

Responsabilidades

• Oversee food preparation across all Chinese kitchen sections, including Wok, Dim Sum, BBQ/Roast, and Prep stations
• Maintain strict adherence to traditional cooking techniques, authentic flavor profiles, and modern fine dining plating standards
• Inspect premium seafood, game, and seasonal ingredients for fresh quality and precision prep
• Manage service flow during peak meal hours and coordinate special banquet or private room tasting menus
• Lead and mentor station chefs (Wok Chefs, Dim Sum Chefs, Roast Chefs) and junior culinary staff
• Enforce rigorous food safety, sanitization, temperature control, and allergen protocols per local health guidelines
• Control stock inventory, assist with vendor sourcing for specialty ingredients, minimize waste, and maintain target food cost margins
• Collaborate with the Executive Chinese Chef on seasonal menu development, dish testing, and promotional recipes
