Job summary

Legacy of Prawn Pte Ltd in Singapore is seeking a hands-on F&B Operations Manager to oversee daily operations across multi-stall outlets, reporting to the Business Owner.

You will manage rosters, relief coverage, inventory, hygiene, and cost controls, ensuring SOPs, food safety, and high service standards.

In a lean team, you’ll train frontline staff, liaise with landlords and vendors, and drive profitability through practical, on-the-ground leadership.

Qualifications

• Minimum 3 years of hands-on operational supervisory or management experience in F&B.
• Experience managing multiple food stalls, food courts, kiosks, or fast-casual concepts is advantageous.
• Willing to be hands-on and mobile across outlets; able to work alongside frontline staff.

Responsibilities

• Oversee multi-stall daily operations across outlets, ensuring consistency in food quality and customer satisfaction.
• Enforce hygiene and compliance with SFA regulations and mall standards.
• Manage weekly/monthly staff rosters for full-time and part-time staff.
• Cover shifts as needed to ensure smooth operations during peak hours or staff shortages.
• Train and coach frontline crew on SOPs, hygiene, and customer service.
• Monitor inventory, control costs, and manage stock takes to protect margins (COGS).
• Reconcile daily sales, cash, and POS transactions across outlets.
• Liaise with landlords, food court operators, mall management, and external vendors.
• Report operational updates and recommendations directly to the Business Owner.
