Job summary

Resorts World Sentosa seeks an Executive Chef, F&B Culinary to provide strategic culinary leadership and overall operational direction to ensure the highest standards of culinary excellence, authenticity, quality, consistency and guest experience.

The role focuses on Levantine, Greek and Mediterranean gastronomy while preserving the restaurant's philosophy, identity and signature principles. You will drive menus, quality, and a high-performance kitchen culture in a luxury setting.

Qualifications

• Degree/Diploma in Culinary Arts, Hospitality Management or a related discipline preferred.
• Minimum 10-15 years of progressive culinary experience, preferably within luxury settings.
• Strong expertise in Greek, Mediterranean and/or contemporary Mediterranean cuisine.
• Strong knowledge of premium ingredients, seafood, produce, meat and Mediterranean techniques.

Responsibilities

• Provide overall culinary leadership and direction for Levantine, Greek and Mediterranean cuisines.
• Uphold the restaurant's culinary philosophy, brand identity and standards.
• Ensure authenticity, integrity and consistency of Greek and Mediterranean cuisine.
• Establish standards, recipes, portion controls and production methods.
• Lead development, review and refinement of menus and seasonal offerings.
• Oversee day-to-day operation of all kitchen areas and culinary sections.
