Madura's Restaurant Pte. Ltd. in Singapore is seeking an experienced Assistant Head Chef to support the Head Chef in daily kitchen operations and to lead a bustling, authentic Indian kitchen.

You will prepare North and South Indian dishes, ensure quality, and maintain high standards of cleanliness and safety. The role requires 3+ years in a similar Indian restaurant, strong supervision skills, and a thorough knowledge of Indian cuisine.

Qualifications

• Minimum 3 years of experience as Assistant Head Chef or senior role in an authentic Indian restaurant.
• Strong knowledge of Indian cuisine: tandoor, curries, biryani, breads, gravies.
• Ability to supervise kitchen staff and coordinate during busy service.
• Good understanding of food hygiene, sanitation, and workplace safety.
• Experience with inventory control and food cost management is an advantage.

Responsibilities

• Assist the Head Chef in managing day-to-day kitchen operations.
• Prepare and cook authentic North Indian and South Indian dishes according to established recipes and restaurant standards.
• Ensure consistency in food quality, taste, portioning, and presentation.
• Assist in planning daily food preparation and coordinating kitchen activities.
• Supervise and guide chefs, cooks, and kitchen assistants during service.
• Support the Head Chef in training and mentoring junior kitchen staff.
• Ensure all food is prepared in accordance with food safety, hygiene, and sanitation regulations.
• Monitor food quality, freshness, and stock levels throughout the day.
• Assist in inventory management, stock rotation, ordering, and receiving of food supplies.
• Minimise food wastage and help control kitchen costs.
• Ensure proper maintenance and cleanliness of kitchen equipment and workstations.
• Take charge of kitchen operations in the absence of the Head Chef.
• Work closely with management and the Head Chef to improve menu offerings and operational efficiency.
• Comply with all workplace safety regulations and company policies.
