As a Pastry Chef de Partie at Hyatt Regency Vilamoura Algarve, you will bring craftsmanship, creativity, and precision to the hotel’s pastry offerings. We are seeking a skilled and passionate professional to join our culinary team. The ideal candidate will be responsible for preparing, baking, and presenting high-quality pastries, desserts, and baked goods, ensuring consistency, creativity, and excellence in every dish.
In this role, you will support the kitchen management team in overseeing daily operations, with particular responsibility for the pastry section. You will play a key role in menu development, staff training, and maintaining consistency in product quality. Your passion for pastry will help position the hotel as a leading culinary destination in the Algarve.
Key Responsibilities
Culinary Leadership
- Prepare and execute a wide variety of pastries, desserts, breads, and other baked goods according to recipes and quality standards.
- Ensure consistent preparation and presentation of high-quality pastry items.
- Collaborate with the Executive Chef on menu development, seasonal specials, and signature desserts.
- Maintain culinary standards in alignment with Hyatt Regency brand expectations.
Operational Excellence
- Oversee daily operations of the pastry section, ensuring smooth and efficient service during peak periods.
- Coordinate closely with the kitchen and service teams to ensure seamless communication and dish execution.
- Monitor portioning, quality control, and timely delivery of all pastry items.
- Ensure all pastry equipment is properly maintained and operated safely.
- Supervise and mentor Commis and Demi Chefs assigned to the pastry section.
- Conduct regular training sessions on pastry techniques, product knowledge, and food safety practices.
- Promote a collaborative, motivated, and performance-driven kitchen culture.
- Ensure full compliance with HACCP, hygiene, and safety standards.
- Encourage the sustainable sourcing of local and seasonal ingredients.
- Implement environmentally responsible practices in line with Hyatt’s Global Responsible Hospitality commitments.
Candidate Profile
Qualifications & Experience
- Proven experience as a Pastry Chef de Partie or in a similar position within a high-end hotel, resort, or fine-dining environment.
- Formal culinary or pastry arts education preferred.
- Strong technical knowledge of pastry, baking, and dessert preparation techniques.
- Experience working with modern pastry equipment and plating styles.
