Principalia Management & Personnel Consultants Inc. is seeking a seasoned lead for our pizza production line in the Philippines.

You will supervise the pizza and dough production team, ensuring all dough, sauces, and toppings meet high quality standards and align with recipes. You will train kitchen staff, plan daily production based on sales, monitor temperatures and portioning, and drive new menu items while controlling costs and waste.

Responsibilities

• Lead and supervise the pizza and dough production team.
• Prepare, develop, and maintain high-quality pizza dough, sauces, and toppings.
• Oversee dough mixing, fermentation, portioning, shaping, proofing, and baking.
• Ensure pizzas are prepared according to standardized recipes and specifications.
• Monitor cooking temperatures, baking times, portion sizes, and product consistency.
• Develop new pizza recipes, dough formulas, and seasonal menu items.
• Train and coach pizza makers, commis chefs, and kitchen staff.
• Plan daily production according to expected sales and business requirements
• Monitor food quality, freshness, taste, appearance, and presentation.
• Control food costs, portion sizes, waste, and ingredient usage
