Job summary

Mandarin Oriental is preparing a new Makati pastry kitchen and seeks a talented Pastry Chef de Partie to oversee a designated section of pastry production. The role reports to the Executive Pastry Chef and emphasizes bringing creativity, strong leadership, and high standards to a pre-opening team.

You will mentor junior staff, ensure recipe adherence, and contribute to menu development while maintaining Mandarin Oriental's culinary philosophy of exceptional guest experiences.

Qualifications

• Diploma, certification, or formal training in Pastry Arts, Culinary Arts, or related discipline preferred.
• Proven experience as a Pastry Chef de Partie or strong Demi Pastry Chef in luxury hotel or fine dining.
• Pre-opening experience is an advantage.
• Strong knowledge of classical and contemporary pastry techniques.
• Expertise in baking, chocolate work, plated desserts, artisan breads, viennoiserie, and pastry production.
• Sound understanding of food safety, hygiene practices, and quality control procedures.

Responsibilities

• Supervise and coordinate day-to-day operations of a pastry section.
• Produce high-quality pastries, desserts, breads, and baked goods per recipes and standards.
• Maintain mise en place for efficient kitchen operations and service.
• Monitor production schedules and workflow for timely pastry delivery.
• Maintain consistency in taste, texture, appearance, and portion control across pastry offerings.
• Lead and mentor pastry team, providing hands-on training and development.
