Qualifications

• Previous experience as a Line Cook or Dimsum Maker preferred.
• Strong knowledge of dimsum preparation, dough-making techniques, and steaming procedures.
• Skilled in hand-folding Xiao Long Bao with consistent pleats and portion control.
• Ability to prepare dough from scratch and maintain texture and quality.
• Knowledge of kitchen sanitation, food safety, and proper ingredient handling.
• Ability to work efficiently in a fast-paced, high-volume kitchen environment.
• Strong attention to detail, teamwork, and time management skills.
• Physically fit and able to stand for long periods; willing to work weekends and holidays.

Responsibilities

• Prepare and cook dimsum and Xiao Long Bao according to company recipes and quality standards
• Make dough from scratch, including proper mixing, kneading, portioning, and resting techniques
• Prepare fillings, broths, sauces, and other ingredients for dimsum production
• Accurately fold and assemble Xiao Long Bao with consistent size, weight, pleating, and presentation
• Ensure product quality, taste, texture, and appearance are maintained at all times
• Operate and maintain kitchen equipment used for dimsum and dough preparation
• Monitor freshness and proper storage of ingredients and prepared items
• Maintain cleanliness, sanitation, and food safety standards in all preparation and cooking areas
• Restock kitchen stations and organize ingredients for efficient workflow during service
• Coordinate with kitchen team members to ensure timely production and smooth operations during peak hours
• Follow kitchen procedures, recipes, and portioning standards consistently
• Assist in inventory monitoring and minimize product waste through proper handling and preparation
