Job summary

Wildflour Bakery + Cafe Inc is seeking an experienced Commissary Manager to lead our central production facility on a full-time basis in the Philippines. The role oversees production planning, inventory, food safety, and supplier relations to ensure consistency and efficiency across all bakery locations.

The ideal candidate will have 5+ years in commissary or kitchen management within hospitality, strong leadership, and a track record of cost control and quality assurance.

Qualifications

• Minimum 5 years in commissary, production facility, or kitchen management in hospitality or bakery.
• Strong knowledge of food safety standards, hygiene regulations, and HACCP principles.
• Experience with cost control and budgeting, plus inventory optimization.

Responsibilities

• Oversee daily commissary operations including production planning, scheduling, and execution across product lines.
• Manage inventory levels, procurement, and storage to minimize waste and ensure optimal stock levels.
• Ensure adherence to food safety regulations, health codes, and hygiene standards.
• Coordinate production schedules with bakery and cafe locations to meet demand and ensure timely delivery.
• Supervise commissary staff: recruitment, training, performance management, and scheduling.
• Monitor product quality and conduct regular inspections and QC checks.
• Maintain accurate records of production, inventory, and financial data for senior management reports.
• Identify opportunities for cost reduction and operational efficiency improvements.
• Liaise with suppliers to negotiate terms and ensure reliable delivery of materials.
• Implement storage, labeling, and tracking systems for all inventory items.
