Job summary

Cordis, Auckland by Langham Hospitality Group is seeking an experienced Sous Chef to lead the Eight Restaurant kitchen. You will oversee day-to-day operations, support the Executive Chef, and ensure high standards of food quality, presentation and service.

You will develop the team, manage prep, plan menus, and maintain HACCP compliance while delivering an exceptional dining experience for guests at a five-star hotel.

Qualifications

• Previous experience as Sous Chef or senior Chef de Partie in high-volume hotel/restaurant environments.
• Strong food preparation and presentation skills with a commitment to quality.
• Solid understanding of food safety, hygiene and HACCP requirements.
• Excellent organisation and time-management skills for busy service periods.
• Attention to detail in quality, portion control and presentation.
• Ability to lead a team, delegate effectively and stay composed in a fast-paced kitchen.
• Willingness to mentor junior colleagues and share knowledge.
• Clear communication and collaboration with kitchen and restaurant teams.
• Strong cost awareness to manage stock and minimise waste.

Responsibilities

• Leading and supporting daily kitchen operations within Eight Restaurant.
• Overseeing food preparation and service across breakfast, lunch and dinner as required.
• Ensuring dishes are prepared and presented to hotel standards.
• Maintaining high standards across food quality, portion sizes, presentation and timing.
• Supporting the Executive Chef and senior kitchen team with menu planning and new concepts.
• Planning preparation according to bookings and business levels.
• Monitoring stock levels and minimising waste.
• Ensuring proper storage, labelling and freshness of food items.
• Maintaining HACCP and food safety compliance.
• Supervising and developing Chef de Parties, Demi Chefs, and Apprentices.

Sous Chef | Permanent Full Time | Full availability required

We are looking for an experienced Sous Chef to join our Kitchen team, working primarily within Eight Restaurant. This is an exciting opportunity to take a key leadership role in a busy five-star hotel restaurant, supporting the daily operation of Eight and ensuring consistently high standards of food quality, presentation and service. As Sous Chef, you will work closely with the senior Kitchen team to oversee day-to-day operations, lead and develop the team, manage preparation and service, and help deliver an exceptional dining experience for our guests.

What You Will Be Doing

• Leading and supporting the daily kitchen operation within Eight Restaurant
• Overseeing food preparation and service across breakfast, lunch and dinner as required
• Ensuring dishes are prepared and presented consistently in line with hotel and restaurant standards
• Maintaining high standards across food quality, portion sizes, presentation and timing
• Supporting the Executive Chef and senior Kitchen team with menu planning, new menu ideas and ongoing food concepts
• Planning and organising preparation requirements in line with bookings, occupancy and business levels
• Monitoring stock levels and making the best use of ingredients to minimise waste
• Ensuring all food items are stored, labelled, rotated and handled correctly
• Maintaining excellent food safety, hygiene and HACCP standards
• Supervising, supporting and developing Chef de Parties, Demi Chefs, Commis Chefs, Kitchenhands and Apprentices
• Delegating tasks effectively to ensure preparation and service run smoothly
• Working closely with the Eight Restaurant team, Stewarding and the wider Kitchen team to ensure a seamless guest experience
• Supporting other kitchen areas when required

Our Ideal Candidate

• Previous experience as a Sous Chef, Restaurant Sous Chef or senior Chef de Partie within a hotel, restaurant or similarly high-volume kitchen environment
• Excellent food preparation and presentation skills, with a genuine commitment to delivering consistently high-quality dishes
• A sound understanding of food safety, hygiene and HACCP requirements
• Strong organisation and time-management skills, with the ability to plan ahead and perform well during busy service periods
• Excellent attention to detail, particularly around quality, consistency, portion control and presentation
• The ability to lead a team, delegate effectively and remain composed in a fast-paced kitchen environment
• A proactive, dependable and team-focused approach to your work
• A willingness to share your knowledge and support the training and development of junior colleagues
• Clear communication skills and the ability to work collaboratively with the wider Kitchen and Restaurant teams
• Strong cost awareness, with the ability to manage stock, minimise wastage and support efficient kitchen operations
• Level 4 or equivalent cookery certificate
• Must be flexible to work a rotating roster, including mornings, evenings, weekends and public holidays
