Ondo Limited in Takapuna, Auckland, seeks a Pastrycook to own production of our dessert cabinet from day one. It’s a hands-on role in a small team, reporting to the owner, with real input into the products we put on the counter.
You will produce our full dessert range and manage daily production, stock, and food safety, while contributing to new item development. Availability for early mornings and weekends is required.
Ondo is a new specialty coffee and premium dessert cafe opening in Takapuna. Everything in our cabinet is made on site. We are looking for a Pastrycook to take ownership of that production from day one.
This is a hands on production role in a small team. You will report directly to the owner and you will have real input into the products we put on the counter.
Preparing and baking our full dessert and patisserie range, including cakes, tarts, laminated pastries, sponges and mousse based desserts
Weighing and measuring ingredients to recipe specification and checking the quality of raw materials
Mixing, kneading, maturing, cutting, moulding and shaping dough and pastry goods
Preparing pastry fillings, creams, custards, ganaches and compotes
Monitoring oven temperatures and product appearance to determine baking times, and coordinating each batch through forming, loading, baking, de-panning and cooling
Glazing pastries and decorating and finishing cakes and desserts
Portioning and packaging finished product for cabinet display and takeaway
Planning the daily production schedule so product is ready ahead of service
Ordering pastry ingredients and packaging, and managing stock, yield and wastage
Maintaining food safety and hygiene standards, including production and temperature records
Cleaning and maintaining production equipment
Contributing to the development and testing of new dessert items
At least 3 years of relevant experience as a pastrycook, patissier or pastry chef; or a qualification at Level 4 or above on the New Zealand Qualifications and Credentials Framework, or an overseas equivalent, in patisserie, baking or pastry arts
Ability to independently produce and manage the full patisserie and dessert range. As this is the only pastry production role in the business and there is no senior pastrycook available to provide day-to-day supervision or training, the successful applicant must be capable of managing pastry production independently from commencement of employment
Sound food safety and hygiene practice in a commercial kitchen, and willingness to work to the food control plan applying to the premises
Availability for early morning starts and weekend work as production and service require
Experience in a specialty coffee or premium dessert cafe
Cake decorating and finishing skills
Experience contributing to seasonal product development
Experience with stock ordering and production planning
Familiarity with New Zealand food safety requirements, including food control plan record keeping
The successful applicant must be legally entitled to work in New Zealand by the time employment commences.
Permanent, full time position
40 guaranteed hours per week
NZD 28.00 to NZD 35.00 per hour, depending on experience and demonstrated skill
