Qualifications

• Experience as Head Chef or senior Sous in a fast-paced kitchen.
• Proven ability to lead a 200-cover Friday night service without losing composure.
• Strong understanding of margins, ingredients, and profitability.

Responsibilities

• Direct all menu development, ensuring seasonal innovation and premium execution.
• Oversee daily kitchen operations, from procurement to service flow.
• Achieve COGS and labour targets through precise costing and rostering.
• Recruit, mentor and manage the kitchen team with a focus on growth.
• Handle HR documentation, performance reviews and daily ownership reporting.
• Ensure Food Control Plans, health and safety compliance, and cleanliness.
