Job summary

Brydone Hotel in Oamaru, Otago, New Zealand, seeks a dynamic Food & Beverage Manager to lead its restaurant, bar and events operations. This hands-on leadership role reports to the Hotel Manager and demands skilled team leadership and a focus on guest experiences.

The role requires a minimum of 2 years in F&B management, relevant hospitality qualifications, strong budgeting acumen and knowledge of SwiftPOS. Evening, weekend, and public holiday work is expected.

Qualifications

• Minimum 2 years of food and beverage management experience in hospitality.
• Relevant hospitality qualification or equivalent experience.
• Strong leadership and communication skills.
• Sound understanding of hospitality financials, including GP, cost control and budgeting.

Responsibilities

• Oversee daily food and beverage operations to ensure smooth service.
• Lead, train and motivate front‑of‑house team members.
• Manage rosters, staffing levels, and labour costs.
• Maintain high standards of service, presentation and cleanliness.
• Work with Head Chef on menus and seasonal offerings.
• Manage stock control, ordering and supplier relationships.
• Ensure compliance with NZ health & safety, food safety and licensing requirements.
• Drive revenue through promotions, events and guest engagement.
• Prepare operational and financial reports.
• Handle guest feedback professionally and proactively.
