Job summary

Reeracoen Recruitment in Malaysia, Selangor is seeking a skilled Lead Baker to manage bakery production, ensure quality and safety across shifts.

You will guide junior staff, uphold recipes, monitor wastage, and coordinate with the Bakery/Kitchen Manager to maintain efficiency. This highly hands-on role requires strong attention to SOPs, cleanliness, and dependable output during peak hours.

Qualifications

• Prepare and deliver high-quality bakery products according to concept offering and standard recipes.
• Lead baker on shift, guiding junior bakery staff and ensuring consistency in preparation and output.
• Uphold baking processes, recipe accuracy, and health & safety standards during production.
• Support the Bakery/Kitchen Manager in training junior staff and maintaining kitchen efficiency.
• Monitor ingredient usage and stock levels to minimize wastage and support cost control.
• Ensure all baked goods meet the outlet's quality, presentation, and food safety standards.

Responsibilities

• Prepare and bake menu items according to defined recipes, processes, and health & safety standards.
• Conduct quality checks on own and junior staff's finished products to ensure consistency in taste, texture, and presentation.
• Manage baking schedules to ensure timely delivery of products according to store demand and peak hours.
• Monitor ingredient and supply levels at station, flagging shortages or quality issues to the Kitchen Manager.
• Assist in checking quality of delivered supplies and ingredients upon arrival.
• Set up and maintain cleanliness of baking stations before, during, and after shifts.
• Provide input on workflow improvements to enhance station efficiency.
• Ensure all baked products are prepared according to SOPs to maintain consistent quality.
• Report and help address causes of food quality issues or customer complaints.
• Maintain cleanliness and sanitary conditions at baking stations and ensure equipment is in good working condition.
• Follow and enforce food safety and hygiene practices during production.
• Guide and mentor junior bakers and new hires on-shift, sharing techniques and best practices.
• Support onboarding of new bakery staff by demonstrating proper preparation methods and safety procedures.
• Assist the Kitchen/Bakery Manager in coordinating station assignments to meet operational needs.
