Job summary

Secret Recipe Cakes & Cafe Sdn Bhd in Petaling Jaya seeks a Research and Development Chef (Hot meal) to develop new hot meal recipes, conduct product research, and standardise recipes and production guidelines. You will work with Production, Operations, Purchasing and QA during development and prepare costings for ingredients while ensuring quality.

The ideal candidate holds a Post Graduate Diploma in Culinary with 3–5 years of related experience, and has hands‑on experience with onigiri,

Qualifications

• Post Graduate Diploma in Culinary required.
• 3–5 years of related experience.
• Experience in making onigiri, sandwiches, handheld foods and packed meals.
• Applicant must be willing to work in Petaling Jaya.
• Must possess own transportation.

Responsibilities

• Develop new hot meal recipes and improve existing menu items.
• Conduct product research, recipe formulation, and cooking trials.
• Standardise recipes, cooking methods, and product specifications.
• Prepare product costing and recommend cost‑effective ingredients without compromising quality.
• Work closely with Production, Operations, Purchasing, and Quality Assurance during product development.
• Conduct product evaluations, sensory testing, and shelf‑life assessments.
• Ensure all products comply with food safety, hygiene, and quality standards.
• Prepare SOPs, recipe cards, and production guidelines.
• Support product launches by providing training and technical guidance to production and operations teams.
• Source and evaluate new ingredients, equipment, and food trends to support innovation.
• Troubleshoot product quality issues and recommend corrective actions.
• Maintain accurate documentation of product development activities and trial results.
• Assist in continuous improvement initiatives to enhance product quality, efficiency, and customer satisfaction.
• Experience infusion cuisine, including onigiri, sandwiches, handheld foods, and packaged ready-to-eat meals.
• Perform any other duties assigned by Management.
