Reporting to the Head of Department, you will lead client briefings, ensure HACCP, HALAL, MeSTI, and GMP compliance, and help evaluate factory equipment while representing R&D at industry expos.
Pizza Amane Tokyo is looking for a business-minded, technical F&B professional to build and secure our frozen quality stabilization and product innovation pipeline. Reporting conceptually to the Head of Department and working hand-in-hand with our Central Kitchen (CK) Manager, you will be the standalone technical anchor for our fast-expanding manufacturing footprint.
Key responsibilities
Stabilize frozen pizza dough parameters (fermentation, freezing, thawing) to eliminate batch-to-batch structural variance
Translate bench-top recipes into scalable central kitchen mass production SOPs and quality checkpoints
Lead technical client briefings, sample approvals, and commercial spec alignments with corporate clients
Formulate products to meet strict HACCP, HALAL, MeSTI, and GMP guidelines, keeping all master specification sheets audit-ready
Support factory equipment evaluations (mixers, blast freezers) and represent the brand's technical R&D at F&B expos
Requirements
Bachelor's Degree in Food Science, Food Technology, Food Engineering, Culinary Arts, or equivalent
Hands‑on R&D or culinary experience in a pizza restaurant or commercial bakery environment
Proven track record of scaling kitchen recipes up to mass production line standards
Background in frozen food manufacturing, white-label product development, and handling client negotiations in English (preferred)
Familiarity with local Malaysian regulatory standards (JAKIM Halal, KKM MeSTI/HACCP) is highly advantageous
