Job summary

Four Seasons Hotel Kuala Lumpur is seeking a Chief Baker to lead the bakery operations, delivering breads, pastries and bakery concepts for the hotel’s diverse dining venues. You will work closely with the Executive Pastry Chef and culinary leadership to maintain Four Seasons quality and seasonal offerings.

The role requires 5–7 years of professional bakery experience in a luxury setting, strong leadership, and fluency in English with Bahasa Malaysia proficiency.

Qualifications

• Diploma or professional qualification in Pastry Arts, Baking, Culinary Arts or related field.
• Minimum 5–7 years of professional bakery experience, preferably in a luxury hotel or high-end hospitality.
• Excellent reading, writing, and oral proficiency in English; Bahasa Malaysia proficiency is required.

Responsibilities

• Lead, supervise and develop the Bakery team with a culture of excellence and teamwork.
• Plan and organize daily bakery production based on occupancy, events and forecasted business levels.
• Produce breads, viennoiserie, pastries and other bakery items to Four Seasons quality standards.
• Develop innovative bakery concepts while maintaining classical techniques.
• Collaborate with Culinary leadership to develop seasonal products and local ingredients.
• Monitor recipes, production sheets, par levels and food costs; ensure hygiene and HACCP standards.
