About the role

Le Meridien Kota Kinabalu is seeking an experienced Chef De Cuisine specialising in North Indian Cuisine to join our culinary team. This is a full-time position based in Kota Kinabalu, Sabah, where you will lead the kitchen operations and oversee the preparation and presentation of authentic North Indian dishes. As Chef De Cuisine, you will be instrumental in maintaining the highest standards of food quality, creativity, and consistency across our dining establishments. This role holds strategic importance in delivering an exceptional culinary experience to our guests and enhancing the reputation of Le Meridien Kota Kinabalu.

Key responsibilities

Plan and prepare authentic North Indian cuisine dishes, ensuring consistency in quality, taste, and presentation according to established recipes and standards

Oversee and manage kitchen operations, including food preparation, cooking techniques, and plating for à la carte and special dining services

Supervise and train junior chefs and kitchen staff on proper cooking techniques, food safety protocols, and North Indian culinary methods

Develop and innovate new North Indian dishes and seasonal menus whilst maintaining authenticity and brand standards

Ensure strict adherence to food safety, hygiene, and sanitation regulations across all kitchen areas

Manage kitchen inventory, monitor food costs, and minimise wastage through efficient resource planning

Maintain a clean, organised, and safe working environment within the kitchen

Collaborate with front-of-house staff to ensure seamless service delivery and guest satisfaction

Control food quality during preparation and cooking, making adjustments as necessary to meet Le Meridien standards

Conduct regular kitchen briefings and communicate daily specials and menu updates to the team

What we're looking for

Minimum 5-8 years of professional cooking experience, with substantial expertise in North Indian cuisine

Proven experience working as a Chef De Cuisine or head chef in a high-volume, upscale hospitality environment

In-depth knowledge of authentic North Indian cooking techniques, ingredients, spices, and traditional preparation methods

Strong culinary skills with the ability to prepare dishes to consistently high standards

Demonstrated leadership and team management capabilities, with experience supervising and training kitchen staff

Comprehensive understanding of food safety, hygiene standards, and HACCP protocols

Excellent organisational and time-management abilities, particularly in a fast-paced kitchen environment

Strong communication skills and the ability to work collaboratively with diverse teams

Flexibility and adaptability to respond to changing guest preferences and operational requirements

Relevant culinary qualifications or certifications are preferred

Proficiency in English is essential; additional language skills are advantageous
