Job summary

Pullman Kuala Lumpur City Centre Hotel And Residences is seeking an experienced Beverage & Bar Manager to oversee daily operations across bars and beverage outlets. You will lead and develop the beverage team, ensure premium service, manage costs, and collaborate with departments to optimize guest satisfaction and revenue.

The ideal candidate has 3–5 years in luxury hotel bar/beverage, strong leadership, and expertise in mixology, cocktails, wines and spirits.

Qualifications

  • Diploma/Degree in Hospitality Management or related field.
  • 3–5 years in bar/beverage with leadership or supervisory experience.
  • Strong knowledge of bar operations, mixology, cocktails, wines and spirits.
  • Proficient in Microsoft Office; experience with hotel POS and inventory systems preferred.
  • Professional grooming, positive attitude and ability to work in a fast-paced five-star hotel.
  • Strong command of English; other languages are an advantage.

Job description

As a Beverage & Bar Manager, you will oversee the daily operations of the hotel’s bars and beverage outlets, ensuring exceptional guest service, high beverage standards, efficient operations, and a consistently premium five-star experience. You will lead and develop the beverage team, manage outlet performance, control costs, and work closely with other hotel departments to maximize guest satisfaction and revenue.

Key Responsibilities
  • Manage the daily operations of all hotel bars and beverage outlets, ensuring smooth, efficient, and guest-focused service.
  • Maintain high standards of beverage quality, presentation, cleanliness, ambience, and service in line with five-star hotel standards.
  • Welcome and engage with VIP, repeat, and high-profile guests, providing personalized service and responding promptly to their preferences.
  • Oversee cocktail, spirits, wine, beer, non-alcoholic beverage, and specialty drink services.
  • Ensure beverages are prepared and served according to established recipes, portion controls, presentation standards, and quality guidelines.
  • Lead, coach, train, and motivate the bar team to deliver professional and knowledgeable service.
  • Prepare staff schedules, allocate duties, and ensure appropriate staffing levels based on occupancy, business levels, and events.
  • Conduct daily briefings and communicate VIP arrivals, guest preferences, promotions, events, and operational updates.
  • Monitor guest feedback and handle complaints professionally, ensuring effective service recovery where required.
  • Coordinate with Front Office, Guest Relations, F&B, Culinary, Events, Sales, and other departments to ensure seamless guest experiences.
  • Monitor beverage inventory, stock levels, storage, equipment, glassware, and operating supplies.
  • Conduct regular stock counts and ensure proper receiving, storage, requisition, and control of beverage products.
  • Monitor beverage costs, wastage, breakage, portion control, and product usage to achieve departmental targets.
  • Assist in developing beverage menus, signature cocktails, promotions, seasonal concepts, and revenue-generating initiatives.
  • Monitor outlet revenue, beverage sales, average spend, expenses, and other key performance indicators.
  • Ensure compliance with food safety, hygiene, health and safety, security, responsible alcohol service, and hotel operating procedures.
  • Maintain high standards of bar cleanliness, equipment condition, outlet presentation, lighting, music, and overall ambience.
  • Maintain accurate inventory records, reports, wastage records, sales reports, and operational documentation.
  • Conduct regular quality inspections and ensure compliance with hotel and brand standards.
  • Support VIP functions, private events, weddings, banquets, and other hotel activities requiring beverage service.
  • Stay updated on beverage trends, mixology, wines, spirits, and new products to continuously enhance the guest experience.
  • Assist the EAM - Food & Beverage with budgeting, forecasting, audits, training, and other operational activities.
Qualifications
  • Diploma/Degree in Hospitality Management, Hotel Management, Food & Beverage Management, or a related field.
  • Minimum 3–5 years of relevant bar and beverage experience, preferably in a five-star or luxury hotel environment, with managerial or supervisory experience.
  • Strong knowledge of bar operations, mixology, cocktails, wines, spirits, beverage service, and luxury hospitality standards.
  • Strong leadership, communication, interpersonal, problem-solving, and organizational skills.
  • Guest-focused with a passion for delivering personalized and memorable beverage experiences.
  • Good understanding of beverage costing, pricing, inventory control, wastage, purchasing, payroll, and departmental budgets.
  • Knowledge of current beverage trends, premium spirits, wines, cocktails, and bar concepts is an advantage.
  • Proficient in Microsoft Office; experience with hotel POS and inventory systems is preferred.
  • Professional grooming, positive attitude, and ability to work effectively in a fast-paced five-star hotel environment.
  • Strong command of English; additional languages are an advantage.
  • Relevant wine, spirits, or mixology certification is an advantage.
  • Willing to work shifts, evenings, weekends, public holidays, and flexible hours according to operational requirements.
