Job summary

Private Advertiser is establishing a bakery central kitchen in Shah Alam and seeks an experienced production leader to build systems and manage a 50–70 person team. You will work with Singapore colleagues during setup to ensure safe, compliant and efficient operations.

You will own planning, procedures, staffing, scheduling, quality controls, and cost management as production scales and deliveries expand to outlets.

Qualifications

• 8+ years of experience in bakery, pastry or food production.
• 3+ years leading a central kitchen or production team.
• Strong production planning, manpower management, inventory and delivery coordination skills.

Responsibilities

• Plan the production layout, equipment, storage and workflow.
• Develop procedures for receiving, production, packing, cleaning, stock control and dispatch.
• Plan manpower and shifts; participate in hiring, onboarding and training.
• Set standards for productivity, quality and safe working practices.
• Turn outlet orders and forecasts into daily and weekly schedules; manage capacity and output.
• Scale recipes with bakery head to maintain product quality.
• Coordinate with procurement on ingredient availability.
• Monitor inventory, yields, wastage, labour use and production costs; act on variances.
• Plan packing and dispatch with logistics and outlets; resolve shortages and quality concerns.
• Establish food hygiene, allergen, temperature and traceability controls; ensure workplace safety.
• Prepare facility for food safety programmes (MeSTI, GMP, HACCP) as directed.
• Coordinate with Halal team on production controls and certification preparation.
• Engage with authorities and councils on requirements, site visits and inspections.
• Work with local authorities during inspections.
