Job summary

Collegio Alla Querce, Auberge Collection, in Florence, seeks a Pastry Chef de Partie to craft pastries, desserts and sweet creations in a luxury hospitality setting.

You will lead your pastry section, ensure consistency in taste, texture and presentation, and support the Pastry Chef during service, private events and bespoke guest experiences within the property's historic kitchens.

Qualifications

• Minimum 2 years in a Pastry Chef de Partie role, ideally in luxury hospitality.
• Formal training or degree in Pastry or Culinary Arts preferred.
• Strong pastry techniques covering doughs, creams, chocolate, and desserts.
• Creative with a keen eye for quality, precision and presentation.
• Ability to work under deadlines independently and with the team.

Responsibilities

• Prepare and produce pastries, desserts, cakes, breads, creams, doughs, and other sweet creations according to established recipes and quality standards.
• Take responsibility for the preparation and execution of your assigned pastry section, ensuring consistency in taste, texture, quality, and presentation.
• Support daily mise en place and ensure all preparations are completed accurately and on time for service.
• Support the Pastry Chef in the preparation and execution of specialty dinners, private events, celebrations, amenities, and bespoke guest experiences.
• Contribute ideas and suggestions that enhance the creativity, presentation, and culinary identity of the Pastry operation.
• Ensure all pastry products consistently meet the highest standards of freshness, flavour, texture, presentation, and portioning.
• Apply strong attention to detail when finishing and presenting pastries and desserts, recognising the importance of visual presentation within a luxury hospitality environment.
• Work closely with the Pastry Chef, Commis Chefs, Interns, and wider Culinary team to ensure smooth and efficient daily operations.
• Assist with stock organisation, food requisitions, receiving, and proper storage of pastry ingredients as required.
• Maintain a clean, organised, and efficient workstation, ensuring all equipment and tools are properly used and cared for.
• Follow all food safety, hygiene, and sanitation procedures in accordance with property standards and applicable regulations.

Employment Type: Definite contract; Full-time

Salary Range: €28.000 gross per year / 14 months
